3 Easy And Delicious Breakfast-In-A-Mug Recipes

If you love to have wholesome and hearty breakfasts every morning but don’t have the time to get out a pot, pan and everything in between, try making these on-the-go mug breakfasts.

Each can be made in under three minutes, and they all taste wonderful!

1. Cheesy Mexican Omelet

Ingredients

  • 2 eggs
  • Salt and black pepper (to taste)
  • 2 tbsp. cheddar cheese, shredded
  • 1 tbsp. black beans
  • 1 tbsp. red peppers, chopped

Toppings

  • 1 tbsp. salsa
  • 1/4 avocado, sliced

Cooking Instructions

  • Whisk 2 eggs together in a mug. Add salt and pepper, and stir in cheese, black beans and red peppers.
  • Microwave on high for 1 1/2 to 2 minutes* or until eggs are set.
  • Top with sliced avocado and salsa.
  • Enjoy immediately!

2. Blueberry Pancakes

Ingredients

  • 3 tbsp. flour
  • ¼ tsp. baking soda
  • 1 tbsp. milk
  • 1 tbsp. canola oil
  • 1 egg
  • 1 tbsp. blueberries

Toppings

  • 1 tsp. maple syrup
  • 1 tbsp. blueberries

Cooking Instructions

  • Whisk all ingredients together in a microwave-safe mug. Mix thoroughly until there are no lumps.
  • Microwave for about 1 1/2 minutes, until inserted toothpick comes out clean or with just a few moist crumbs.
  • Top with a little maple syrup and a few more blueberries.
  • Enjoy immediately!

3. Chocolate Banana Bread in a Mug

Ingredients

  • 4 tbsp. flour
  • 1/4 tsp. cinnamon
  • 1/4 tsp. baking powder
  • 1/8 tsp. baking soda
  • 1/8 tsp. salt
  • 3 tbsp. packed brown sugar
  • 2 tbsp. vegetable oil
  • 1/4 tsp. pure vanilla extract
  • 2 tbsp. chocolate chips
  • 1/3 cup ripe banana, mashed

Cooking Instructions

  • In the mug, combine flour, cinnamon, baking powder, baking soda, salt, sugar, oil and vanilla. Stir until well combined.
  • Add chocolate chips and mashed banana. Stir until well combined.
  • Microwave on 50% power, 1 minute at a time, for about 3 minutes*, until toothpick inserted comes out clean or with a few moist crumbs.

*Microwave/cooking time is based on a 1,000 watt microwave, so cooking times may slightly vary.
